Fiesta Quiche: It’s Superb . . . If It’s From Polly’s in Huntington Beach

Dear SOS: I hope you can get Polly’s in Huntington Beach to part with their recipe for fiesta quiche. It is the lightest, most delectable, mouth-watering quiche I’ve had in ages. The light cheesy crust just melts in your mouth. Slightly heated or cold, it’s wonderful.

Dear Marjorie: Anything else? We found it excellent, too. POLLY’S FIESTA QUICHE
5 to 6 medium eggs
1/4 teaspoon salt
1/8 nutmeg
1/4 teaspoon cayenne pepper
2 cups whipping cream
1/3 cup finely diced onions
1/3 cup finely diced tomatoes
1/3 cup diced canned chiles
1 (9 or 10-inch) unbaked pie crust)
1 1/2 ounces shredded Cheddar cheese
1 1/2 ounces shredded Jack cheese
Combine eggs, salt, nutmeg, Cayenne and whipping cream in a bowl. Whip until smooth and light in consistency. Spread onions, tomatoes and chiles in bottom of pie crust. Pour cream filling over onion mixture in shell. Sprinkle with Cheddar and Jack cheeses. Bake at 375 degrees 60 to 70 minutes or until wood pick inserted near center comes out clean. Allow to cool 10 to 15 minutes before cutting. Makes 1 (9- or 10-inch) pie.
Dear SOS: I would like to ask if you could provide me with a recipe for chocolate cheesecake.

Dear Terry: How about La Belle Helene’s in Napa Valley? LA BELLE HELENE CHOCOLATE CHEESECAKE
1 tablespoon butter
3 ounces unsweetened chocolate
9 ounces semisweet chocolate
4 (3-ounce) packages cream cheese, softened
2 tablespoons vanilla
1 cup whipping cream
6 eggs
1/2 to 1 cup sugar
Chocolate Wafer Crust
Melt butter over hot water. Add chocolate and melt over low heat. Beat cheese until creamy. Add vanilla and whipping cream. Stir in chocolate mixture. Beat eggs with sugar and slowly beat into chocolate mixture. Turn into Chocolate Wafer Crust and bake at 350 degrees 40 to 45 minutes or until cake puffs slightly in center. Cool and chill thoroughly before unmolding. Serve with whipped cream, if desired. Makes 14 to 16 servings. Chocolate Wafer Crust
1 (8 1/2-ounce) package chocolate wafers
2 tablespoons melted unsalted butter
Crush wafers. Add melted butter to make crumbly dough. Press into bottom of 9-inch spring form pan.
Dear SOS: The orange Juliana recipe you gave as the closest thing to an orange Julius missed the boat because the closest one I have come across is this one.

1 cup orange juice
1 to 1 1/2 teaspoons vanilla pudding mix (not instant)
Crushed ice
Combine orange juice, vanilla pudding mix and ice in blender container and blend until frothy. Makes 2 cups.
