Safe, Certified, Smoke

On a hot summer night when the thought of turning on the oven makes you cringe, there’s nothing more satisfying than knowing that a hunk of smoked Texas beef brisket is waiting in the refrigerator. The best we’ve tasted comes from a town in the hill country called New Braunfels, which is famous for its barbecue. Guadalupe smokes meat the old-fashioned way, without nitrates or preservatives.
This is extremely lean meat that has been hand-trimmed of all visible fat and smoked in a hickory-filled pit for 15 hours. What you get is a big dark lump of meat; when you slice it, there is that ring of reddish color under the surface that can come only from long smoking. The meat comes fully cooked, vacuum-packed and ready to eat. The smoky brisket, seasoned with salt and pepper, is excellent cold or at room temperature. Use it for a main course, throw it in a salad, or slice it thin for sandwiches. At $53.50 (which includes four pounds of meat, jars of mustard and barbecue sauce, and postage), you’ll be amazed at what a brisket does to beef up your larder.
