Carving the Thigh
1. Separate the thigh from the carcass at the hip joint.
2. Cut through the knee, separating the thigh from the leg. Then slice the dark meat in long, vertical cuts.

In the Kitchen
1. Make a deep vertical cut along either side of the breastbone.
2. Using the knife, separate each breast from from the carcass.
3. Place the breast on a cutting board and slice it.
Carving the Breast
At the Table
1. Make a deep horizontal cut at the bottom of the breast.
2. Carve the white meat away in vertical slices.
