In essence, it’s the words

I enjoy reading articles by Russ Parsons. Not only does he write interesting stories, he frequently stimulates the palate with his words.
In one sentence, describing the taste of Olympia oysters [“Return of the Native,” Dec. 7], he captures the essence of this delicacy: “The first thing that hits you is the brine, like taking a sip of the ocean on a cold day.” Exactly!
