Summer is the season for ceviche. What’s more refreshing than raw fish or seafood “cooked” in lime juice and garnished with chile and cilantro? Some newish places are giving ceviche its due with an expansive choice of ingredients and even mix-and-match menus. Here are three of them.

Paiche

Tuna ceviche “sashimi style” is served at Paiche in Marina del Rey.
