Combine the sugar and bitters in a mixing glass. Muddle the ingredients in the bottom of the glass unitl the sugar is mostly dissolved. Add the bourbon and cloves. Add ice to above the level of the liquid and stir for 15 seconds. Strain the mixture into a rocks glass containing a single large ice cube. Garnish with the cinnamon and peach slice, and serve immediately.
